Bacon Gumbo recipe

Your guests will be anxious to eat dinner once you tell them you have prepared bacon gumbo. They will be even more anxious for leftovers once they have eaten it.


8 thick slices bacon, chopped
1 cup chopped onion
½ cup chopped celery
½ cup chopped green bell pepper
3 cloves garlic, crushed
1 pound boneless, skinless chicken breast, cubed
2 cups sliced okra
1 (15-ounce) can diced tomatoes
1 (12-ounce) bottle dark beer
1 cup chicken broth
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon hot sauce
½ cup chopped parsley
2 cups cooked white rice


1. Place bacon in a large pot over medium heat. Cook until browned, 8 minutes. Add onion, celery, and bell pepper; cook until softened, stirring, about 5 minutes. Add garlic and cook 30 seconds.

2. Add chicken and cook until lightly browned on all sides, 8 minutes total. Add okra, tomatoes, beer, and broth; bring to a boil, cover, and simmer 30 minutes.

3. Season with salt, pepper, and hot sauce; stir parsley in and cook 5 minutes. Serve over rice.
