File Gumbo recipe

File powder can be found at your local spice shop. It's a thickening agent added to gumbo when okra isn't available, and it's easy to use. Just sprinkle some into the gumbo at the end of cooking, and let the thickening begin.


½ cup vegetable oil
1/3 cup flour
1 cup diced onions
½ cup diced green bell pepper
½ cup diced celery
3 garlic cloves, minced
2 tablespoons Cajun seasoning
2 bay leaves
½ cup diced ham
1 pound chopped chicken thigh pieces
6 cups chicken stock
1 pound peeled, deveined shrimp
12 oysters, shucked
¼ cup sliced green onions
1 tablespoon hot sauce
½ cup file powder, or to taste
2 cups cooked white rice


1. Heat oil in a large pot over medium. Add flour and cook until nutty brown, 20 to 30 minutes, stirring continuously. Add onions, bell pepper, and celery; cook until softened 5 to 7 minutes, stirring. Add garlic, Cajun seasoning, and bay leaves; cook 30 seconds.

2. Add ham, chicken, and stock; bring to a boil over high heat, cover, and simmer 60 minutes. Add shrimp and oysters; cook 5 minutes. Add green onions and hot sauce; cook 5 minutes. Stir in file to taste and serve over rice.
